Using frozen block raw materials in production, the enterprises are faced with the need to grinder it for further use in the technological cycle.
The optimal solution for this task is rotary machines for flaking frozen blocks, which allow grinding raw materials by cutting with minimal muscle fibers grated. The use for flaking frozen raw materials of grinders with the function of operation with frozen product leads to crushing and grinding of a large amount of meat proteins which result in their denaturation and coagulation, and this does not have the best effect on taste characteristics of the finished product, color formation of minced meat, moisture-binding ability and worsens the quality of the pattern of structural sausages.
