Grinding frozen raw materials in food industry

Using frozen block raw materials in production, the enterprises are faced with the need to grinder it for further use in the technological cycle.

 

 

The optimal solution for this task is rotary machines for flaking frozen blocks, which allow grinding raw materials by cutting with minimal muscle fibers grated. The use for flaking frozen raw materials of grinders with the function of operation with frozen product leads to crushing and grinding of a large amount of meat proteins which result in their denaturation and coagulation, and this does not have the best effect on taste characteristics of the finished product, color formation of minced meat, moisture-binding ability and worsens the quality of the pattern of structural sausages.

 

KOMPO OFFERS TWO MODELS OF ROTOR FLAKING MACHINES:

  • IB-4 – allows flaking frozen blocks with the temperature up to minus 18°С to a state of max. 11 mm thick flakes, which is ideal for further grinding in the cutters without additional heating during production of cooked sausages and frankfurters.

 

  • IB-8 - flakes frozen blocks with the temperature up to minus 15°С to a state of max. 22 mm thick flakes, which is optimal for qualitative pattern during preparation of minced meat of structural sausages in the cutter. Unlike a guillotine-type grinder, rotor flaking machine has a significantly higher output with a similar quality of grinding.

  

Advantages of using rotor flaking machines IB-4, IB-8:

  • Allows eliminating energy costs for defrosting raw materials for grinding during production of cooked sausages and frankfurters.
  • Saves production area (there is no need to use the raw material defrosting chamber).
  • Allows shortening the production cycle (absence of need to defrost raw materials for flaking saves 12 - 24 hours).
  • Reduces labor costs (there is no need to transport pallets to the defroster and lay out blocks on racks).
  • Load on energy-intensive equipment (the cutter) is reduced, increasing its service life, including wear of knives and reducing energy costs.
  • Simple design ensures low maintenance and operating costs.
