Machines for flaking frozen food blocks KOMPO IB-4 and IB-8

EQUIPMENT PURPOSE

The machines are designed for high-quality and efficient flaking of frozen food blocks with temperatures from minus 18°С to minus 3°С during production of sausages, semi-finished meat products, baby food, meat, curd, chocolate blocks, butter, nuts, vegetables and other products.

 

Depending on the needs of production, two models are offered:

  • IB-4 - flakes the block to a state of maximum 11 mm thick flakes, which can be immediately sent to the cutter for making minced meat of cooked sausages or for additional grinding into the grinder.
  • IB-8 – flakes the block into 22 mm thick pieces, which is optimal for further preparation of minced meat of cooked-smoked and raw-smoked sausages in the cutter.

 

PERFORMANCE

Grinding output for IB-4 is 4000 kg/h, for IB-8 - 8000 kg/h. The equipment is recommended for large and medium-sized enterprises.

 * Up to 10 pieces with a bigger weight from one minced block are tolerated.

 

OPERATION

The technological cart is put under the grinding unit and covered with a fixing cover.  A frozen block of the correct shape is manually fed into the receiving tray, from where, under its own weight, it enters the grinding area. During flaking process, the block is pressed by the stops of a special clamping device, which prevents it from being thrown back. Flaking is done with specially shaped knives fixed on the rotor. The flaked product enters the technological cart.

 

SHUTTER OF THE RECEIVING TRAY

The grinder uses a gravity shutter of the receiving tray which provides reliable protection against ejection of the block by pushing forces during grinding. Quick closing of the shutter after feeding the block is due to its own weight and the offset axis of fixation. To wash the receiving tray, it is enough to put the shutter on the upper part of the housing, since the need to dismantle it for washing is no longer required.

 

RECEIVING TRAY

The length of the receiving tray has been increased to prevent ejection of the block through the shutter. The tray and the cutter shaft box were reinforced by installing additional stiffeners.

CLAMPING STOPS

Clamping stops are designed to hold the meat block during flaking and prevent it from being pushed out of the cutting area. In upgraded version, to increase durability of the unit, the diameter of the stop fixation shaft is increased.

  

CUTTER SHAFT

There are two types of cutter shafts, depending on the product model.

The difference is in the shape of the knives fixed on the rotor.

 

The cutter shaft of the flaking machine KOMPO flakes frozen block:

  • in IB-4 to the state of flakes up to 11 mm thick;
  • in IB-8 up to 22 mm thick.

 

Both types of knives are protected by patents and are the result of long experiments in which the optimal shape and sharpening angles are determined.

 

CART FIXATION COVER

The cart fixation cover performs the holding function and protects the flaked product from spilling onto the floor.

 

LOCKING OPERATION WITHOUT CART

In the absence of a technological cart under the flaking unit, the start of the flaking machine will be blocked which prevent loss of raw materials. 

 

HINGED HATCH

For ease of cleaning the cutter shaft, sharpening and replacement of knives there is a hinged hatch in the housing. A locking mechanism prevents the hatch from opening during operation of the flaking machine. The hatch is unlocked immediately after the engine stops.

 

MAINTENANCE AND REPAIR

For ease of maintenance and repair, the flaking machine is equipped with removable covers for quick access to working mechanisms. A hinged control panel is used to service the power cabinet.

 

 

ADVANTAGES:

  • high output as compared with guillotine flaking machines;
  • eliminates energy costs for defrosting raw materials for grinding;
  • saves production area (there is no need to use the raw material defrosting chamber);
  • shortens the production cycle (absence of need to defrost raw materials for flaking saves 12 - 24 hours);
  • reduces labor costs (there is no need to transport pallets to the defroster and lay out blocks on racks);
  • improves properties of the product (raw material is flaked by cutting, with no muscle fibers grated and squeezed, which improves appearance of the product on cut, gives a more juicy taste, improves color formation processes, increases the yield of finished product);
  • simple design ensures low maintenance and operating costs.
